MEET CHEF MICHAEL MECH
You know me as the Bungalow Chef with a passion for classic family recipes and the memories they stir up. And, you can find many of my family favorites on the Recipe Revival blog I write. Or learn where to get my time honored dishes to share with family or friends at The Bungalow Kitchen.
Over the course of my career I’ve worn many different hats in the culinary world. From research and development chef to manufacturing sales, I’ve had a wonderful journey. But the 20 years I spent as chocolatier, baker, and business developer for the famed Rahmig’s House of Fine Chocolates was the sweetest. While this iconic chocolate retailer closed in 2012, I thought it was time to resurrect their memorable treats for everyone who has a passion for chocolate and amazing desserts today.

A LONG TRADITION OF FINE CHOCOLATES
The House of Fine Chocolates was an iconic shop in Chicago’s Lakeview neighborhood before it closed after 70 years. This is where I learned from the spirit of the grand master of chocolate, Willy Rahmig. With my undeniable passion for chocolate and being surrounded by endless inspiration, I learned to make the best chocolate truffles, sacher tortes, chocolate pralines, special order cakes, molded chocolates and so much more. Beautiful, glorious chocolate, with a variety of flavor profiles, was the reigning foundation of every decadent edible masterpiece created then…and today.
In addition to fine desserts, I’m continuing the tradition of Rahmig’s seasonal molded chocolates with my vintage chocolate molds making turkeys, Santas, Easter bunnies, eggs and everyday items too.

ANTIQUE MOLDS FROM AROUND THE WORLD
Over the years I’ve amassed a great collection of the world’s finest classic chocolate molds. Noteworthy manufactures include Anton Reiche, Letang Fils, Hans Brunner, J.K.V., and J.G. Laurusch. Dating from 1900 to pre-World War II, the artistry, and detailed expressions are amazing. Each and every one has a memorable legacy of sweet happiness that carries on today.
THE FINEST IN THE WORLD & FREE TRADE
I search for best in class chocolate from around the world and only use manufacturers and distributors that incorporate Fair Trade standards. Not only do their chocolate products have a higher cocoa percentage and taste better, but they’re healthier. To me, it’s mandatory that suppliers guarantee farmers and employees are paid fair wages and work in a safe and protected ecological environment.
Regardless of your age or how many times you have circled this earth, every time you taste chocolate it brings you right back to your first Chocolate experience.
I call it “Chocolate Memory.”
